Three guesses as to what inspired this post, and your first two don't count.Anthony Bourdain's got your back with a cheap and easy mushroom soup, although ignore his advice about getting spendy with the sherry...you can just use any dark wine and it will work just as easily. Too busy to throw together fancy dishes like souvlaki? Try this deconstructed version that involves throwing a bunch of things on the grill and digging in. If lamb is outside of the budget, it would work with chicken too. Put down those frozen meatballs and step away. For the same price, you can spend no more than five minutes squishing everything together to make your own. How much does 3/4 cup of buttermilk and a stick of butter cost? Is it less than a tube of refrigerated biscuit dough? I have no idea, but these look way better than anything that little dough boy cooked up and are super easy. This yummy shrimp scampi relies upon a pound of shrimp and a bunch of pantry staples (ok, maybe you don't have dry white wine in the wine rack, so you'd have to get that) and you can pull it together in the time it takes for your pasta to boil.
You don't need to buy one of those envelopes of dried soup mix to make the ubiquitous pot roast... just raid the pantry and pull out those forgotten things called "spices".
How pretty is this carrot radish salad? And probably costs you less than a buck to make. Need a quick and easy veg? How about a little Italian grilled eggplant rolls to throw on the side of grilled chicken breasts? Or a quick summer squash toss? Nothing gets easier than coring out an apple, sprinkling it with yumminess and popping it into the oven. Need something even cheaper and easier? Ok, how about a gooey chocolate lava cake that you mix together right in the pan that you're baking it in? 6 CommentsLeave a comment |

All of these sound delightful! I particularly want to cook the shrimp scampi now!
Thanks so much for including my carrot/radish salad in the list!

I've made variations on the chocolate pudding cake from the last blurb. It's always good, always easy, and nearly the richest dessert I've ever put in my mouth. I don't know if it's the brown sugar with the cocoa or just the gooeyness of the sauce that puddles around the cake, but it requires a glass of milk and a patient savoring. YUM!
I will always through my weight behind anyone endorsing and end to pre-packaged food.
Thanks for linking to my recipe. The more I cook, the more I realize that some of the most delicious recipes are the simplest and allow the main feature to shine!
Premade meatballs are on my list of "scary questionable meats". I don't go near those things.
Plus, when you make stuff yourself, you get to control the amount and quality of ingredients. If you like lots of garlic, add it! If you want less salt, don't put much in! There's no control like that over prepackaged foods, or even stuff from restaurants.
