I've been pretty petulant in the mornings lately. Did you know that you're more likely to be grumpy in the morning because your blood sugar is low, and low blood sugar has an adverse effect on your mood? I actually have this uncanny talent for finding a scientific reason behind all of my negative personality traits.

Regardless of my manipulation of biology, breakfast seems like the perfect time to indulge in some serious comfort food. But, man, comfort foods get a bad rap. Why do we always assume that what's comforting needs to be bad for you? I mean, I like mac & cheese, fried chicken and chocolate milk shakes as much as the next person, but I'm a little hesitant to call those my comfort foods. Comfort foods are foods that trigger positive memory-related feelings. My comfort foods: apple sauce, coffee (otherwise known as my soul mate), and banana bread, which makes the perfect breakfast with my super-comforting-coffee. Okay, so banana bread is not the healthiest of foods, but don't worry--I've got a cure for that:


Uber-Healthy Banana Bread Muffins:
Makes approximately 8 muffins

1 1/4 cups whole wheat flour
1/2 cup white sugar
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground cinnamon
1/4 tsp. pumpkin spice
2 egg whites
2 bananas, mashed
1/2 cup applesauce

Directions
1. Preheat oven to 350* F.
2. In a large bowl, combine dry ingredients. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into muffin pan.
3. Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center comes out clean.

These come out to about 150 calories a piece. I like to garnish each muffin with a walnut, which are a great source of omega-3 fatty acids, but do add a little more on the fat/calorie side. These muffins also taste great under Ben & Jerry's Banana Strawberry FroYo.  I'm just sayin...

I pretty much love any food that involves bananas and this receipe sounds like a delight. I always tell myself that I'll use that last banana that wasn't eaten to make a banana something or other, but it usually ends up being thrown out. It's my firm resolve to make these muffins with my next mushy banana.

Valerie, yes, you could definitely sub in pumpkin for apple sauce, although they may be a little denser (which isn't necessarily a bad thing).

Also, you can use regular flour instead of whole wheat I just always bake with whole wheat flour.

You bring up a really interesting topic concerning the way people tend to view comfort food. I had always though of comfort food as the instant gratification type of food like a pint of cold stone but wow, I feel far from comfortable afterwards! I think I need to readjust my views on comfort foods to reflect choices that not only comfort me at the time, but after as well.

These remind me of the baked oatmeal recipe I love. I love recipes in muffin tins--it's instant portion control! (Not sure I could be trusted with a whole loaf of warm banana bread--regardless of it's healthy merits! ;-) But a muffin? Sure!

You could substitute honey for the sugar; I use honey as the sweetener in all my bread recipes. It's just a little bit healthier; less processed, with easier-digestible sugars. I also always put pecans in my banana bread/muffins... more calories, yes, but protein! lol
