photo via The Kitchen Illiterate Laura, who writes The Kitchen Illiterate, who does not seem illiterate in the slightest, frankly, does things like cook giant feasts of grilled and pulled pork and makes her own pizzas and bakes her own scones, all of which fills me with longing--that she come to my house and be my best friend, that I wouldn't set my kitchen on fire if I tried to time Chicken Florentine properly. But sometimes, she makes things that make me think we are already best friends because we share a secret heart, like her tuna and white bean sandwich. The mayonnaise in your traditional tuna salad is replaced with rich and creamy cannellini beans, adding an extra shot of protein, way cutting down on the fat, and making this the perfect healthy summer sandwich--especially when you slap it on a really, really good roll and pour yourself a tall glass of sun tea. 1 CommentsLeave a comment |

Thanks for all of your kind words about my bloggity blog! I'm so glad you liked it. And yes, that sandwich is delicious, and perhaps the healthiest thing I've cooked this summer. And this was supposed to be the summer of vegetables. Sigh. :-)
