We talk a lot about the vegetarian and vegan dietary choices, and certainly everyone can agree that eating the occasional meat-free, veggie-centric meal will make your body happy and healthy. It's been a while since I instituted Meatless Mondays in our house, and while we certainly haven't hit the sweet spot every single week, we definitely eat vegetarian at least once a week, if not always on a specific day.

There are so many reasons to embrace the occasional vegetarian meal, beyond the ethical implications: vegetarian meals are usually cheaper, lower in fat and tend to rely upon a variety of different plant sources. But Sir Paul McCartney asks you to consider eschewing the bacon for the sake of the planet. Mark Bittman, over at The Minimalist, takes the idea one step further and asks you to pull back on meat consumption the rest of the week too, by using meat more as a punctuation point for a meal, rather than the building blocks.

Unless of course, one suffers from PCOS and has to manage ones blood sugar (you cannot eat soy - makes it much worse, so tofu as a source of protein is out. You also have to be careful about most grains/certain legumes) In which case going vegetarian will actually hurt you. There is no one size fits all for diets.

Hate to vent on you, but I hate articles like this. They just perpetuate faux science. Eat small farms produce and meat products and you will be fine. Reducing my access to my main source of protein, which helps me stay healthy is not going to work for me. Cutting out meat or greatly reducing it will make me very very ill.

There is hope for bacon lovers!!! While hunting around online I found this recipe and seriously - tastes just like bacon. It even has the crispy/chewy texture thing going on!!!

Hi Sue, I am not familiar with PCOS, however it is proven that eating a plant based diet is one of the most healthful for humans. We are the only species that has to COOK meat before eating it and the only species that drinks another species milk. Tofu and soy is NOT the only protein source for vegetarians as that plants have protein, too! In fact, per calorie, many plants have more protein than meat. Also, a recent article has come out in Environmental Science and Technology magazine that says eating a vegan diet has less of carbon footprint than eating locally. Again, I know nothing about your disease, and I am sorry that you have to watch what you eat, but please get your facts correct when talking about vegetarian diets, if not for the animals, at least for our planet, as the beef industry creates more greenhouse gas than cars, trucks and buses combined. If we all reduced our meat consumption by just 20 percent, it would be as if we all switched from regular cars to hybrids.

Thanks for posting my recipe. I'm completely on the same page about meatless meals. If I eat less meat, I'll help offset the greenhouse gases produced by my long commute!

I am by no means a vegetarian, I love meat, but lately I've been trying to use it more as an accent. Meatless doesn't have to mean boring. It doesn't have to mean spaghetti with marinara sauce. It can be just as exciting and just as satisfying as a steak. Heck, my Midwestern husband raves (yes, raves) about a tofu dish I make.
