I am SO freaking jealous of you folks with your fresh strawberries. I've been paying a princely sum for anemic berries that, bare naked, do not rock my world nor make me all woobly in my tummy, but they make for decent ingredients in other things. I think I'm going to try this AMAZING strawberry meringue pie with the not-quite-ready-for-prime-time berries. There's something delightfully Southern about meringue, and it feels luxurious and fancy and yet is a bazillion times better for you than whipped cream. I think I'd even shorten the steps and ditch the crust, or maybe do the South Beach nut-based pie crust to cut the sugar and carbs, since I'm personally trying not to give myself Type II Diabetes.
