![]() One of the coolest things in the world is making up your own recipes. Even cooler is when they're actually tasty recipes. The very coolest is when your tasty recipes are so tasty that they could win big prizes and make you super famous all over the world. Cooking Light is throwing their annual Ultimate Reader Recipe Contest--the only catch is that you've got to use one of their sponsors' products. Which makes it kind of like Iron Chef, right? They've just put out their last call for entries, and the deadline is May 31. The cooking thing is weird. I can't think of the last time I bought any of that stuff. Ok, maybe broth. I use butter only to bake. I love baked beans, but I haven't bought canned ones in forever because of the crap they put in with them. Newman's pasta sauce? More like I throw my own together. It's not more than dumping a few cans of tomato product into a pan of sauteed onions and garlic. I can't recall the last time I bought a pre-made marinade, either. Garlic, olive oil, vinegar/lemon juice, pepper, salt, and herbs can take you very far. I used to put rice vinegar on my salad, but I've reverted to lemon or balsamic.
Oh yeah, the other night I dumped some frozen corn into my tempeh burrito filling (which totally rocked hardcore, but next time I'm tossing in chipotles in adobo for heat). But still, my problem is I don't think in terms of measured amounts...
I can figure out what to do, but quantity? Screwed. Totally screwed. Thinking about the easiest thing; sausages sauteed with garlic and kale alongside pasta with sauce, and I couldn't tell you how much kale or garlic or olive oil or anything. Dang.
