The winter's gone, the spring is practically here, and the strawberries--the big, fat, gorgeous ripe, red, juicy, sweet amazing kinds of strawberries--are returning. It's not high season, yet, but you can still find yourself some absolutely glorious baskets full of the things. And while the best thing to do, with the very first (or 50) baskets of seasonal strawberries is to eat them right out of the basket, right up to the little green stem and then lick your fingers. Heidi, of the lovely 101 Cookbooks, reminds us that you can also do glorious things with the glories of strawberries--like her so-easy-even-I-can-make it strawberry panzanella. It can easily be made vegan, and you can swap out the sugar for agave nectar or honey, and as we all know, that makes it completely healthy. So it's pretty much, more or less, the perfect spring recipe. |
